can all the servers in the small biz server 2000 be installed on 1
single computer? it wont crash?

Thats sort of the point for this product. Instead of
having one server for exchange one for Dc etc.. you have
one central server that does all the work. As for crashing
as long as its setup right and on good hardware it should
be fine.

Not only can they, but under the terms of the End User License Agreement
they -must be- all installed on the same box.
Providing that you Spec the box appropriately, there is no problem.

There are hundreds of thousands of SBServers running reliably around the
world.

Try an Eval version for yourself.

It is also great that the SBS team spend so long tuning all the products
to work well together, enhancing them, optimising them and writing such
cool Wizards.
