I'm guessing that a UPS isn't going to keep running for a "couple of hours".

If you expect the power to be off, you would be better to do a normal
shutdown that night before you leave, keep the machine powered down that
night, turn it on the next day when you return and just skip the backup that
night, or run the backup of only the critical things before or after this.

If your office lost power unexpectedly for a short time, a UPS would protect
the server, essentially it would not see the line drop, but this is not
something that most people can use for hours, just maybe 20 minutes to an
hour at most, depending upon the UPS.

Finally, if the power is actually off, and the server was running, 19 out of
20 times, nothing permanent would be damaged, the system would restart and
clean up anything that happened without permanent problems. There is a small
chance that a sudden loss of power could either cause corruption of data, or
damage to hardware, but it's small. The worst case is a condition where,
perhaps in a storm, the power is constantly fluctuating on and off, or
worse, not correct voltage....this is very bad, and a UPS will protect
against that if it provides "brown out" protection.
