I read somewhere that you can't defrag the exchange
server. Can I use the Microsoft utility to defrag the C:
and D: drives? (leaving the M: drive alone). Will the
default MS supplied defrag utility work?

Yes, the defragmentation utility build in Windows 2000 works just fine.
