You could use Windows Backup to back up their folder in
Documents and Settings. But this will just be files.
What would you need from a user profile, should you need
to restore to a new machine? If it's just data, then
this will work. If it's the entire profile, then maybe
not. But then you could look at picking some things out
of the roaming profile settings (My documents, for
example).
