Can I uninstall Exchange 2000? What is the easiest way to do this?

Can I then re-install exchange?

Just want to do this to get rid of all the exisitng exchange data and
information due to business re-org.

Yes. SBS Setup in Add/Remove Programs or from CD1.

Quickest way to do this would be to stop the Information Store services,
delete all the stores and restart the IS. It should create fresh empty
databases.

You should make sure all user accounts have had their mailbox deleted
first, or Exchange will get confused about what mailboxes should or should
not exist.

I would not attempt to reinstall a properly functioning Exchange Server.
Are you trying to get rid of the mailbox data, the company and addressing
data, the users and mailboxes, or some combination? Whatever you're trying
to do, if the server is functioning normally, there's a better way than
reinstalling IMO. Please provide more details.
