Does anyone know how and if you can uninstall exchange 2000 sp3 from
SBS 2000 without removing IIS?
I would also like to uninstall AD if possible as this is no longer a
production server.
The box also has Sql Server 2000 which I would like to leave.

You can't uninstall AD (basically demote) an SBS box and have it function as
just a Windows Server 2000. I don't remember enough about SBS 2000 to tell
you how you might uninstall only Exchange.

you could uninstall Exchange 2000, but the better option is to simply stop
and disable the services for Exchange
But as Steve pointed out.

SBS 2000 must be the first server at the root of the AD forest/domain. And
must hold the FSMO roles
