Am being swamped in messages from exchange about undeliverable messages to
unknown users.
How can I stop exchange generating these warnings as they almost all relate
to spoofed e-mail addresses?

You shouldn't normally see these at all, since they're outbound messages.
Sounds like "Send Copy of NDR To" has been set in the SMTP Virtual Server
on the Messages tab.

In Exchange System Manager, Servers, <your server>, Protocols, SMTP,
<your SMTP server (probably the default one)> - properties, Messages -
remove your addy from the "Send copy of NDR to" field.
