Easier said than ...
I don't know what half of these are?
I'm running ISA, Exchange, Trend Server protect, Outlook,
DHCP, DNS...

Why do you think you have to stop anything?

Get SBS 2003 ;-)

Seriously

829623 - Default Services That Are Installed in Windows Small Business
Server 2003:
http://support.microsoft.com/?kbid=829623
324418 - Default Services That Are Installed in Small Business Server 2000:
http://support.microsoft.com/default.aspx?kbid=324418

IMAP
Pop3 but not sure if you can tighten anymore.

The services that are running in 2k3 run in different levels in 2k.
They made a major effort to to hardening that I'm not sure you can do in
SBS 2000.
