We would like to upgrade to SBS 2003 and also run a back-up server that would
mirror the main server just in case the main server fails we can switch to
the back-up and repair the main server. Does anyone know the best way to
achive this.

First - this can't be done in real-time, because SBS doesn't do clusters.

1) Purchase SBS2003 with Software Assurance (which gives you Cold Server
rights).
2) Purchase two identical servers.
3) Install SBS on production server & configure.
4) Backup / image your production SBS using your favorite backup / imaging
tool
5) Restore to cold server.

Repeat steps 4 & 5 as often as you feel necessary, depending on how much
data you're willing to live without.
