I messed up and installed all 50 CAL's. I only needed 15 CAL's in
total on this server. How can I remove the "extras"?

There is no way to remove CALs other than a reformat/reinstall.

Sean... just out of curiosity: How did you manage to install 50 CALs in
error? Normally... is not like you have those discs lying around.
