I recently installed SBS 2000 and have not been impressed
by its memory usage. I started with 512MB ram in the
server and the memory usage went up to about 600MB.
Exchange, ISA, IIS and SQL all using large chunks of
memory (do I need IIS, I am not hosting a website?). I
increased the RAM to 1GB and now the server is running at
1.6GB! Surely this can't be right.

Isn't this just Exchange making use of all available memory?

Sounds ideal to me.

why did you buy RAM if you didn't want the server to use it?

OK, it's a rhetorical question.

YES, SBS will use not only your available RAM but also the paging file. This
is not considered a problem.

It just seems a bit greedy. Is this a good thing. If I
start to run more services on the server will Exchange
etc use less RAM?

Greed is good :-)

Yes, Exchange will release it when it is needed somewhere else (just try to
open 40 IE windows and you will see).

Yes, you need IIS -- Exchange uses it.

As to your argument about memory usage -- let's see, you're complaining
because you have X amount of memory and SBS istrying to utilize as much of
it as it can. You're falling under the old and outdated impression that it's
bad if all memory is being used- 'cause surely that means somethings wrong
or the machine will start to slow down. Remember, we're not back in the
Windows 3.11 days anymore.
