I keep getting spam mail sent to my company for an employee that no longer
works here.
Is there a way to get rid of it automatically by email name?

yes! create a "dead mail" distribution group, and then go to properties for
the distribution group and add the email addresses that you wish to reject
under the 'E-Mail Addresses' tab. Not only can you use this to get rid of
email for users that no longer work there, but also all the junk email that
is addressed to sales@yoursite.com or info@yoursite.com

Be sure that you do NOT include anyt members in the Members tab.

how does this work? well, when an email comes in to info@yoursite.com ,
Exchange will see that this email address is part of a distribution group,
and attempt to forward that email. However, since no members are listed, the
email is essentially tossed away!
