I have an SBS 2000 with SP 4 installation on a Dell Power Edge 1400 SC. I
would like to know if I can apply an MDAC update ( such as 2.7 or 2.8) with
out it hurting Exchange. I currently have 2.5 sp3.

Nope. Done it here. Shut down Exchange before hand and you'll be fine.
