The best choice for Outlook to talk to Exchange is to configure it with
a "MS Exchange Server" account. It's the default way for Outlook and
Exchange to communicate.
IMAP is an industry standard method of accessing a mail server, much
like POP3. The key difference is that IMAP is designed for situations
where the primary goal is to keep mail stored on the mail server,
rather than only locally as with POP3.
Exchange is capable of being an IMAP server and a POP3 server too,
therefore you can connect to Exchange with either of those as an
alternative to using the native Exchange Server support in Outlook.
The primary advantage of using "Microsoft Exchange Server" accounts
with Outlook over IMAP is that it supports all the Exchange features,
which IMAP does not. The most obvious of these is non-mail folders (eg
Calendars, Tasks, etc). IMAP is designed for email only, and doesn't
cope well with other kinds of item that Exchange can handle.

You have to configure it. Right-click the account name, and choose
"IMAP Folders".
