My Exchange server will not mount the information store apparently because
my antivirus deleted my priv1.stm file. I tried to look for the file in the
last backup and I can't locate the file. Any Ideas? I still have the
priv1.edb file.

You probably won't see the actual file itself.
If you have the option to restore the entire Exchange Information Store, or
Mailbox store, then that is the option you want. Restore the Mailbox Store
will give you back the priv1.edb, and priv1.stm.

Next time, exclude *.stm, and *.edb from your AV scanning.

Strongly recommend to restore from tape first before you try the createstm
switch.

FYI & FWIW I tried to restore from tape and didn't get the file back for
some reason. I then tried the eseutil /createstm and it worked!
