Q1. Can anyone suggest a good way of being able to get all incoming and
outgoing mail into a mailbox as well as the individual users mailbox, I know
this is not a good idea but necessary.

Q2. Also as by default Exchange sets up a distribution group and to my
surprise it also assigns it an Internet address, is a simple matter of
removing the SMTP mail address from this group to disable this feature?

Q3. Is there any way to monitor (or count) the number of emails coming and
going over a period of time or is enabling logging the only way?

Create a Public Folder with whatever name you think is right (eg "Audit
Trail"). Mail-enable it. Then go to the properties of the Mailbox
Store, and you'll find an Archive Messages in this Store option in
which you can put the Public Folder name. Now all messages in and out
of the store will be archived to the public folder.

I would strongly recommend you set Ageing Limits on the PF, or it will
eventually consume all the available space in Exchange.

You can control who can send to the list in its' properties. Simply set
it to all the local users.

I'm not sure if the Message Tracking Centre includes any stats
capabilities, but I'd have thought that was probably the best place to
look.
