Situation: Have an SBS 2000 server that is running as DC / Exchange / File /
Print / 3rd party application.

Question: Need to know if I can demote the SBS 2000 server and have it host
the 3rd party application only. The plan would be to introduce a new SBS
server (2003/2008) as the DC / Exchange /File / Print server. So, in other
words decommission the old SBS 2000 so that it is only a member server
hosting the 3rd party application. This old server would then be a member
server on the new domain

Sorry, can't do that. Flatten the old SBS and install a new copy of Windows
Server.

BTW, SBS 2008 will be out in a few months and it includes a second copy of
Server in the Premium Package, as well as a full copy of SQL server.

The best value at present may be to purchase SBS 2003 with SA Open License
and upgrade later.

SBS 2000 can not be demoted to be only a member server.
