SMTP service is running however when I click on the IIS root and try to add
a SMTP virtual server like I've done on many other installation the SMTP is
not an option on the "New" menu. I only have Web and ftp. What do I need in
order to add the SMTP Virtual server in IIS?

Assuming you are running SBS with Exchange, you have to do this through the
Exchange System Manager.
