I'm using MOSS 2007, WSS 3.0, SQL Server 2005 on a medium farm (2
front-end, 1 index server, 1 SQL Server 2005)

Does the stemming feature exists in the WSS 3.0 search?

It supposed to be working based on this site:
http://www.wrox.com/WileyCDA/Section/id-305250.html
"The search engine is using a type of search called FREETEXT; this
type of search uses a feature called stemming."

But I'm trying it on my installation and it's not working... Does
something needs to be activated for this to work? Could anyone
confirm me that this should work.

This is a newsgroup for people who have installed the WSS 2.0 product or
the WSS 3.0 product. Not for people who have installed MOSS 2007
(irrespective of whether they mention WSS several times in the quetion!).

MOSS 2007 questions go either to the old SPS newsgrouyp
microsoft.public.sharepoint.portalserver

OR to the appropriate one of the new newsgroups for all SP products and
versions. In this case that would be
microsoft.public.sharepoint.setup_and_administration

Christian stemming doesn't really work with WSS 3.0. However, you aren't
really using WSS. When you add MOSS, it adds components to to the
functionality of WSS. In particular, enhanced search capabilities like
stemming.
