I am trying to figure out how to tell a subsite that I already created to use
the quick links from its parent site.

When I set up the new site, I chose the 'don't inherit quick links' option -
but now I want to. Is there a way to do it? Or do I need to go through all
the subsites and manually re-enter all the links?

Are you sure you mean quick launch and not top link bar? Or do you mean
just to show the site on the parent's quick launch? The only inheritance
I see is with the top link bar...

I meant the Quick Launch, but I think you're right in that there isn't a
default setting to inherit the Quick Launch menu in to child sites... I got
mixed up.

This being the case, is there a way to bring a parent's quick launch menu
through to sub-sites? Or is it just not an easy thing to do in wss?

When a subsite is made, you're given the option to put that site on the
parent's quick launch. There is no built in mechanism, that I know of, to
offer the option of the subsites *inheriting* the quick launch from their
parent.

If the subsite only inherited the quick launch of the parent, where would
the links for the subsite itself go? How would you get to the subsite's own
shared documents if the quick launch only offered the parent's links?

At this point the only way to get parent links on the quick launch of a
subsite is to put them there manually.

At site creation you can set the option to include it on the quick launch
navigation. If you don't check that option, you have to do it manually.

My problem is, that now everybody sees that hyperlink in the navigation.
Also the users that have no permissions on that site.

Is there a solution to set the visibility of the subsite-link, like the ones
which were created by sitecreation?

Sure, but you need to do it with SharePoint Designer... Here are the steps:

1) Open the parent site in SPD
2) On the 'Site' menu, select 'Navigation' (this should open a treeview
showing your top link bar and quick launch for the site)
3) Locate the quick launch, and the heading you want to create the link
under (Sites maybe?)
4) Right-click on the heading entry, select New->Page (this will create
a new child node under the heading you selected)
5) Double click on the new node to open the page (you need to do this in
order to edit the node, you won't actually modify the new page, you can
delete it after you are done)
6) Click on the 'Web Site' tab to go back to the navigation view
7) Right-click on the new node, click 'Properties'
8) In the dialog box, find the site you want to create the link to,
select it and click OK
9) The link is created and is now security aware. You can change the
name of the link in SPD (right-click the node and select 'Rename' or in IE)
