SharePoint Tutorial/Basic Help

Hi guys,

I've just been handed what looks like two big projects
setting up SharePoint sites and I know absolutely nothing
about it. Are there any good beginner resources out
there that I can use?

I tried google and haven't come up with anything really
great.

Just a facetious reminder not to deploy on a production server
which is all too common when 'just being handed' a directive
from management which rarely allocates sufficiently funds for
testing servers.
