Search Not Finding Expected Files

I did a search for "demo" and did not get back a document that included the
word "demolition" in the title, which is not what I expected. Any ideas why
my search would not have returned this file?

WSS's search is full-text search. It will also give things like demos or
demoing when searching for demo

However demolition is a completely different word and this is not included
in the set for "demo".

You could get demolition from searching for demo, by using search that
does wildcard. Take a look at Coveo Enterprise Search for SharePoint
WSS and SPS which does leading, middle, and trailing wildcard, as well
as provides about 65 additional features and capabilities. You can try
