I called Microsoft support about this as we needed an answer today. It turns
out to be a simple thing, though kind of hidden. It made me feel better that
it took them 20 minutes to find it!
To re-add a closed web part in a Meeting Workspace:
1. On the Meeting Workspace Home page, click "Modify This Workspace".
2. From the drop down menu, select "Add Web Parts".
3. By default, the second heading says "Create Lists". Click the down arrow
to the right of this, to bring up other options, then click on "Browse".
4. Look for your web part(s) under the "Web Part List" heading.
