Can the default list provided in the Status field be customized beyond
"draft", "pending approval" and "approved"?

Paul,

YES! Follow these steps:

1. Navigate to the task list in question.
2. Click the "Modify Settings and columns" link on the left side.
3. Scroll down and click the "Status" link in the "Columns" area.
4. Scroll down to the "Optional Settings for Column" area and locate the
third edit box on the page right below this text: "Type each choice on a
separate line:"
5. Enter/amend the choices you want, one per line.
6. Click the "OK" button.
7. Return to the list and test.

That should do it.

Do the below instruction require special privileges (such as server admin)?

Paul,

As long as you have administrative rights to the list, you can modify its
settings.
This usually means being a site administrator, but you don't have to be a
server admin for this.
