I am trying to consolidate multiple projects, all with the same resources
into one master project. My ultimate goal is to create a Gantt chart that
takes into account the time being spent by these resources for all projects.
(Right now there is one resource which is me. But we are building a team, so
there will eventually be more resources, but they will still overlap
projects).

In other words, I need to be able to see if I am working on Project A for 8
hours on Day 1, I will not be available to work on Project B at all on Day 1,
and therefore will schedule 4 hours on Day 2 for Project B, leaving 4 hours
on Day 2 for Project C.

Is there any way to do this?

Yes, it can be done by using a resource pool file. You may want to look at
Help in Project as well as Mike Glen's series of articles at:

See particularly articles 17 & 18.
