Is it possible to print an entire schedule (all tasks) but self-select a date
range for the Gantt chart? In other words, I'd like to print my entire
schedule of tasks, but not print the first few years of the project's gantt.
I hope this makes sense!

Yes!
The Print... window allows you to define a timescale limit.
