How do I have a Gantt Chart (the one that shows up in the right hand pane)
begin with a date that I set? Right now it always starts from the current
date. Thanks,

ChrisH,
There are two ways. One is to select a task that has a start date that
you want and then hit the "go to selected task" icon on the Standard
toolbar. If the icon is not visible on your standard toolbar add it
under "customize" toolbar.

The second method is to use Edit/Go To and enter the task ID or date you
want.
