How do I change the symbol on milestones, from the default black diamond, to
something else, on ALL milestone tasks on ALL projects?

I assume I do something in the Enterprise Global, but I don't know where.

Here is what you do:

Format menu,
Barstyles
choose the milestone line and change it to what you want.

For the enterprise, I'm not 100% sure as I don't use it, but I think you
need to check out the enterprise global before you do this and make sure you
are in the default view (Gantt view or something like that).

Yup! You were right - check out enterprise global and do it that way.
