My tests indicate that our SharePoint server acts as an
open SMTP relay. This is not good. How can I turn this
off without breaking the SharePoint server?

Sharepoint doesn't rely on SMTP. You can configure SPPS to use any SMTP
server (thats what I did). I would think that the only way SMTP would get
installed is if you installed it manually.

when smtp installs it doesnt default to being an open relay.. you need to
add that to it so dont worry.
