How can I set individual permission on each documents of a list?

In a sharepoint portal server 2003 documents list, I can only set the acess
permission on whole list. If I can set permission on each document?

You can't in SPS 2003. You can now in WSS 3.0 and MOSS 2007.

Upgrade! (if you can - although perhaps this isn't a good enough sole
reason for doing it)

I don't know what you mean by *same* here.

If you open a v3 document library and then right-clik on the document
name in the view. One of the options is "manage permissions".
