You may want to check out the Microsoft Solution Accelerator for Intranets

The Microsoft Solution Accelerator for Intranets contains some great
documentation on desiging and deploying a SharePoint solution. Within the
documentation you will find recommendations for hardware sizing.

If you don't want to wade through the Intranets Accelerator (though it is
very good), that server hardware should be more than adequate for your
scenario and still have room for growth.

That server should run SPS and SQL for 100 users without much problem. Just
like a file server, if users concurrently read or upload very large files,
they may see a reduction in response time.

What about fault tolerance? Don't forget to backup the sites and the
database regularly.
