Restricting User Access

I have a consultant who I want to give access to our Sharepoint system on our
server. Is there a way to restrict his access to only certain folders and
parts of Sharepoint?

You can restrict anybody's access to

a) sites
b) sub-sites
c) Lists

You can not (in SPS 2003) restrict their access to folders or individual
items.

(You can in MOSS 2007 and WSSv3 - now in Beta)

Can you restrict edit access to folders or individual items? In other words, can I give
univeral read access to items, but only a few people can edit them?

(I'm very, very new to Sharepoint.)

I answered that already.

You can in the new versions now in Beta. You can not in the present versions
(SPS 2003 and WSS v2)
