I would like to copy all of the documents in our
department Sharepoint document library to send to
department members that do not have access to Sharepoint.
How can I do this? When I right click on a subdirectory,
it only gives me the option to "Save Target As..."

Try switching the doc library to Explorer View then drag and drop into your
email message.

It only places the path in the message area; not the
actual file. There must be a way - I can't believe that I
would have to open each document and save it. That would
take a LONG time!

Add a Network Place that points to the document libary in question. When you
open the library this way, you should have no trouble dragging and dropping
into an email message.
