How do I capture user activity such as how many users are hitting the site
and how long they are logged in? Is there a table in SharePoint I can use to
capture these data?

Thanks,

You can enable usage analysis processing through central admin. It will not
tell you how long they are logged on but it will tell you that they logged
on. Other options at
