The best way is to use POOM on the device and write your own app to
interface with this data that you can use to talk over your activesync
connection to a desktop component. The underlying format is EDB for the
Windows Mobile 5.0 pim database, the APIs for which are documented in the
WM5.0 SDK, but you'll find it much easier to use POOM to do the hard work
for you.
