A friend gave me a personal loan of $1,000.00. How do I enter and track the
loan without it showing as income?

Try creating a new liability account worth 1,000 for the loan you owe to
your friend. Transfer the money from the liability account to your
cash/checking account.

The problem with that is that the liability account will not track interest
properly.
