I'm an italia user of Money 2007 and I want to disable all the on-line
updates of the program (when I start I and when I open the investment
and other tab of the program), because the updates haven't italian

Not easily upon startup, but you can reduce the time involved with
moving to the Portfolio by un-ticking
Portfolio->UpdatePrices->UpdateAutomaticallyEvery__Minutes for
better speed when entering the portfolio view.

If you download stock dividends from your broker, it is probably
best to disable the dividend forecast estimates from being inserted
into your register for you. You can disable that forecasting with
Portfolio->ChangePortfolioSettings->(General)NotifyMeOfDividendsForMyHoldings

By default, the backup of Money 2006 and later is much improved in
that it will make more than one backup. I suggest you raise from
the default of 4 to a new bigger number. Also, I suggest scheduled
backups to a USB flash drive. You will, however, have to manually
trim the older files in the USB flash drive, due to a relatively
harmless bug/quirk.
