Almost nobody who uses * Business editions of Money helps other users here.
That having been said, perhaps I can answer one of your questions, though
not definitively for a Business edition. Money (at least non-Business
editions) does not have a way to specify a default category for a payee.
That's kinda like specifying a default phone number for a zip code. It can,
however, learn ways to figure out a Payee name from a range of possible
payee names (see "rules manager" in help) and to carry forward a prior
category for a given Payee to a new transaction with the same payee. How
exactly the UI does this when you are accepting downloaded transactions is a
mystery to me since I am a curmudgeon and skip all of this new-fangled
download data mangling stuff. Others will have to jump in here.
