IIS 6 on Windows Server 2003 crashes randomly - Some times it can go
for a week and more, some times for a couple hours before it seems to
just give up serving pages. IISreset always fixes the problem, but what
is the cause of the problem? No error messages in the event log, no
error messages in the IIS log files for the sites...

The server was even doing this when running only a very simple site -
no code to execute, just some included files for page layout - with
only 5 or so visitors a day. When all sites were running on Server 2000
everything was dandy...

Any ideas? Reinstall IIS? Rebuild the 2003 server? Rebuild the server
as 2000 instead?

No ideas. IIS6 is rocksteady so I'm thinking about a driver or memory
problem that was not triggered on windows 2000.
You can schedule however, your web process (since II6 pools applications) to
autoreset itself at idle time for instance. Normally, this setting is on..
So: go to the IIS console, select the default application pool and look at
the poperties. Ensure that the pool is reset by time or by another param
that you can configure.
