The ADC service(s) will have to be upgraded to 2003 version prior to
deploying Exchange 2003 (this is covered in deployment tools) and that will
upgrade the existing connection agreements.
Exchange 2000 won't run on a Windows 2003 server - so you will have to
upgrade from Exchange 2000 to 2003 first on the box, then do the OS.
Schema roles don't need to be on the Exchange server, only contactable -
never have had to be on the server.
Finally, You can't in-place upgrade from 5.5 to 2000 - you will have to
swing upgrade those to another box.
