got a existing e2k running and have a new server with windows 2003
which I need to migrate the existing database to the windows 2003
exchange. There is loads of info about installing the windows 2003
exchange on the new server and then replicating the two servers. Once
that is done I then have to uninstall the e2k server. Is there not an
easier way where I can move the store and then reimport it into the
new w2k3.

Any safer way.

Whilst I agree that it would be nice to kill the two birds with the
one stone, look at it from a support point of view. What happens if
the restore goes belly up? Was it the Windows to blame or did Exchange
have a pink fit and refuse to play ball. What about the downtime for
the user base? Surely they'd thank you more if there was only a small
amount of user by user downtime rather than a potentially lengthy
outage.
If you do have the spare/new hardware it's certainly better to build
the new box from scratch with W2K3 and then put E2K3 on it, replicate
the data and then follow the procedures to remove the first Exchange
2000 server.
