You can have one exchange server supporting any and all of the Active
Directory domains in your entire forest. You do not need an exchange
server in each domain or each tree

You just need to add a recipient update service for each domain:
319065 HOW TO: Work with the Recipient Update Service in Exchange 2000
http://support.microsoft.com/?id=319065
This will stamp those users with email addreses, etc.

That is because Exchange 2000 cannnot span multiple forests.
It can span multiple domains within the SAME forest, but not multiple
forests.
For that you would have to have an Exchange Org in each forest and create
contacts if needed for members of the remote forest.

Not that I am aware of, using ADMT to move users between forests would be
the easiest I know about. This particular question would be better directed
at a Windows domains newsgroup.
