Can both the /forestprep and /domainprep be run on a exchange 2000
native-mode (in a Windows 2000 mixed-mode domain) in the day whilst users are
accessing their emails?

Does this process require that the exchange servers need to be rebooted or
just the GC servers?

/forestprep and /domainprep update the schema of the domain, so users email
should not be affected. Also means there should be no need to reboot ex
servers.

AFAIK, there is no "need" to reboot GCs, but it is preferable.
