I'm about to install Exchange 2003 SP2 Enterprise Ed on a standalone Windows
2003 server.

It will never be clustered.

I assume Exchange enterprise edition will install on Windows standard ? Is
there *any* reason why I should use the enterprise version of Windows ?

Dear Rory,

Exchange Server 2003 Enterprise can be installed on Windows Server 2003
Standard Edition without any problem. the only reason to use Windows
Enterprise Edition is only if you want to use clustered solution. so as you
said, if you will never use cluster, then go a head and install Exchange Ent
on your Windows Std.

Volume Shadow Copy Service: transportable hardware snapshots
or
Non-Uniform Memory Access (NUMA)

would affect Exchange in any way.

Non-Uniform Memory Access (NUMA)
System firmware can create a table called the Static Resource Affinity Table
that describes the NUMA topology of the system. Windows Server 2003,
Enterprise Edition uses this table to apply NUMA awareness to application
processes, default affinity settings, thread scheduling, and memory
management features. Additionally, the topology information is made
available to applications using a set of NUMA APIs. NUMA available in
Winodws Server 2003 Enterprise - R2, this is what i found, and it is not
available in Standard Edition of Windows R2. nothing related to Exchange
Server 2003 and NUMA was found.
