I have a single E2k3 Server which will be hosting multiple, separate
companies. How can I give each company their own email address and prevent
them from seeing the other companies hosted on the same Exchange 2003 server.

I know this can be done but have been unable to find any specific
documentation on as to how.

Any help very apprecicated.

You can.
It's not a small job but this:
http://www.msexchange.org/tutorials/Shared_Hosting_Exchange_2003_Part1.html
gets you started onthr path.
