I currently have a Exchange server 2007 that was installed into a new domain
(that isn't in production yet) within a Virtual Machine (VMware). I've
decided not to use vm and install it on new physical hardware. I
understand there is a way to move the installation from one machine and
restore it on a new machine (/recoverserver parameter) but I think for this
case it would be easier to just re-install. My question: - How or do I
have to remove any references or to the existing installation from active
directory?

You need to use Add/Remove programs to remove Exchange 2007 from AD and the
VM.

Install the new one and then uninstall the old one. You'll have to
move the OAB generation server though but put the new one in before
taking the old one, it's easier that way.
