I actually have the reverse of setup and installation.

We have migrated to a new 2003 domain, but still have a working trust from
our old domain.

In that domain, there is one DC, and one 2003 Exchange Server. I have found
a couple of technet articles, but I am a little confused as to the exact
process of completely removing an Exchange box from the domain. We need to
the old domain for a while yet, so we want to make sure the removal does not
have a negative impact.

I have removed all Exchange Mailboxes from the old domain, and am ready to
begin removing all Exchange components. I read an article on Exchange 2000,
that talked about running update.exe /removeorg and the re-running forestprep
and domainprep. (KB273478)

However, on another article that talked about removing Exchange 2003 (KB
833396) it does not describe the same process. Sounds like all I do is
delete the mailboxes, remove Exchange, delete the server account, and I am
done.

Looking for guidance before I do anything permanent (and stupid...lol)

So why remove it?
Just do the migration and leave the stuff there until you decomission
the domain (you're obviously getting rid of it, otherwise why migrate
to a new domain)
If you want rid of Exchange I'd do a full migration and then rebuild
that particular forest.

We wanted to re-use the box that the old Exchange server was running on, in
the new domain. I could just pull it out, but our other sysadmin was nervous
of the impact that would have on the old domain, which we still need up and
running.
