If you want to cluster Exchange you need both Enterprise Editions.
Standard editions of both aren't able to cluster.
Connection to a SAN has no bearing on the edition of the OS and
Exchange. You must use supported HBA's and, if you are booting from
SAN, follow the best practices from the vendor and MS on that.
