Hello I have a question about an organization with multiple Exchange servers.

From what I understand, only ONE Exchange server actually sends the e-mails
out to the Internet. The other Exchange servers simply route the e-mails to
this server.

If this is correct, how do I determine which Exchange server actually sends
these e-mails to the Internet? How do I change which server is responsible
for this?

This is only true if you configure it like that. If you do nothing to
the configuration then each server will send its own mail to the
Internet.

Depends on what version of Exchange you're talking about. In Exchange
2003 you need an SMTP connector in the Routing Group and you speficy
what the "local bridgehead" will be - i.e. the server responsible for
sending. In Exchange 2007 you're looking at a Send Connector and
specify which HT will be doing the sending.
