You got it.
Timing is everything. Add the Windows machine first. Let it settle. Add
the Exchange server. Let settle. Move the roles and responsibilities to
the new server (both windows and exchange roles/folders etc). Change the
incoming mail path to your new server. Let settle.
Not sure what you mean by redirect MX records in this case, but I'll leave
that to you. :)
